This delicious and unique cousin of cacao has many names. Known as "Pataxte", "Cacao Blanco", and "Cacao Tigre" in Mexico and "Macambo" in Peru, and also known by some as "Jaguar Cacao". It's botanical name is "Theobroma bicolor". Taste is nutty, smooth, milky.
These Pataxte beans are grown by the "Chinanteco" people in the fertile Chanantla Region of Oaxaca. Many small farmers grow these beans - we've sourced a small amount from our recent trip by farmers Dionisia, Don Emilio, and Seferino among others.
We stone grind these pataxte beans with a bit of cocoa butter.
